冰鎮蟶子Iced Razor Clams
蟶子簡單用上柚子醋和XO醬調味,啖啖肉之餘,微辣酸香,相當滋味。
分量:4人份 需時:20分鐘
材料:
蟶子 5至6隻
柚子醋 少許
糖 少許
鹽 少許
XO醬 少許
Ingredients:
Razor clams 5-6 pieces
Citron vinegar a little
Sugar a little
Salt a little
XO sauce a little
做法:
1. 劏開蟶子,去掉沙囊及污垢後清洗乾淨。
Cut open the razor clams, remove the sand vein and dirt, rinse well.
2. 煲滾水,加蟶子煮約15秒離殼。
Boil a pot of water, cook the razor clams for 15 seconds until the shells come off.
3. 將蟶子浸冰水。
Soak the razor clams in ice water.
4. 蟶子殼烚約5至10分鐘。
Boil the shell of the razor clams for 5 to 10 minutes.
5. 柚子醋加鹽、糖及XO醬拌勻。
Mix the citron vinegar with salt, sugar and XO sauce.
6. 蟶子殼瀝乾水分,上碟擺盤。
Drain the shells and arrange them on a plate.
7. 放上蟶子肉。
Arrange the meat on the shells.
8. 淋上醬汁。
Drizzle with the sauce.
小貼士:蟶子殼至少烚煮5至10分鐘,有消毒作用。
Tip:Boil the shells of the razor clams for at least 5 to 10 minutes for sterilization before arranging the shells on a plate.
