Simmered Fried Dace with Salted Black Beans, Long Bean and Beancurd Puff
白豆角和豆卜吸收了豆豉鯪魚的精華,香口惹味,是下飯佳品。
分量:4人份 需時:25分鐘
材料:
豆豉鯪魚 1罐
豆卜 10粒
白豆角 1斤
蒜頭 2瓣
油 適量
Ingredients:
Fried dace with salted black beans 1 can
Beancurd puffs 10 pieces
Chinese long beans 1 catty
Garlic 2 cloves
Oil some
調味料:
黃豆醬 1湯匙
砂糖 半茶匙
紹興酒 少許
Seasoning:
Soybean sauce 1 tbsp
Sugar 1/2 tsp
Shaoxing wine a little
做法:
1. 豆卜汆水,去掉表面油分。
Blanch to degrease the beancurd puffs.
2. 將豆卜切開口,由內反向外。
Slit open the beancurd puffs, make them inside out.
3. 豆豉鯪魚切成小塊,蒜頭切粒。白豆角用手分成段,起油鑊炒香後下蒜粒。
Cut the fried dace into small pieces. Chop the garlic. Tear the Chinese long beans with hands.
4. 加黃豆醬及灒酒,加少許水及糖上蓋略煮,下豆卜炒勻。
Add soybean sauce. Drizzle with Shaoxing wine. Add a little water and sugar, cover with a lid and cook for a while. Add beancurd puffs and mix well.
5. 加入豆豉鯪魚。
Add the fried dace with salted black beans.
6. 煮至收汁上碟。
Cook until the sauce is reduced.
小貼士:加黃豆醬調味,可提升菜式的鮮味。
