小朋友喜歡吃甜食,日式照燒汁的味道香甜可口,適合為不同的美食調味,正好吸引小朋友進食。周日(9月18日)隨《星島日報》附送的食譜書《蔣怡 親子DIY 和風照燒》,CoCo(蔣怡)教大家以自製照燒汁烹調五道美食,今日先睇CoCo示範「煎牛扒配辣辣照燒汁」。
煎牛扒配辣辣照燒汁
Ribeye Steak with Spicy Teriyaki Sauce
甜甜的照燒汁,加少許辣椒,變成層次豐富的美味醬汁。
分量:2人份 需時:35分鐘
材料:
牛排 1塊
照燒汁 1杯
蒜蓉 2茶匙
辣椒粉 1茶匙
紅椒粉 1茶匙
牛油 4湯匙
鹽 少許
黑胡椒 少許
油 少許
Ingredients:
Ribeye steak 1 pc
Teriyaki sauce 1 cup
Minced garlic 2 tsp
Paprika 1 tsp
Red pepper powder 1 tsp
Butter(cut into cubes) 4 tbsp
Salt a pinch
Black pepper a little
Oil a little
照燒汁材料:
日本豉油 半杯
味醂 半杯
清酒 半杯
糖 半杯
洋葱片 1/4個
蒜頭(拍扁) 2瓣
薑 5片
Teriyaki sauce:
Japanese soy sauce 1/2 cup
Mirin 1/2 cup
Sake 1/2 cup
Sugar 1/2 cup
Onion(sliced) 1/4 pc
Garlic(smashed) 2 cloves
Ginger 5 slices
做法:
1. 將照燒汁材料混合,煮滾後以小火煮20分鐘至濃稠。
Combine teriyaki sauce ingredients, bring to a boil and simmer for 20 minutes until thickened.
2. 熄火待涼,用攪拌機打成照燒汁。
Turn off the heat and let it cool, then blend it into a sauce with a blender.
3. 牛扒用鹽和黑胡椒調味。
Season the steak with salt and black pepper.
4. 平底鍋燒熱油,將牛扒煎至半熟,然後靜置5分鐘後切件。
Heat oil in a frying pan. Pan-fry the steak over high heat until medium rare. Let the steak rest for 5 minutes covered with foil, then slice.
5. 平底鍋加少許油燒熱,炒香蒜蓉、辣椒粉及紅椒粉,加照燒汁煮滾後,然後轉小火。
Heat a little oil in a frying pan, fry minced garlic, paprika and red chili powder until fragrant, add teriyaki sauce and bring to a boil, then turn to low heat.
6. 將牛油逐小塊加入醬汁中,拌勻至牛油融化,伴以牛扒享用。
Add cubed butter piece by piece, mix well until the butter melts and the sauce is silky. Serve the steak with the sauce.
小貼士:醬汁可因應個人口味調校濃度。
