鮑魚薏米紅豆飯
Abalone, Semen Coicis and Red Beans Glutinous Rice
煲煮薏米紅豆水後,加點創意與心思,注入罐頭鮑魚汁燜燴,最後加上罐頭鮑魚,即成升級料理。
分量:2人份 需時:20分鐘
材料:
鮑魚 1罐
芝士 1湯匙
菠菜苗 4両
雞蛋 2隻
蒸熟糯米飯 2湯匙
薏米 4両
紅豆 1両
有皮薑 2片
檸檬 4片
水 適量
鹽水 適量
Ingredients:
Abalone1 can
Cheese shreds 1 tbsp
Spinach4 taels
Egg2 pieces
Steamed glutinous rice2 tbsp
Semen coicis 4 taels
Red beans 1 tael
Ginger with pee l 2 slices
Lemon 4 slices
Water some
Salt water some
做法:
1. 薏米及紅豆加水浸1小時。
Soak the semen coicis and red beans in water for one hour.
2. 將薑片拍扁,加適量水、紅豆及薏米煲1小時後隔渣。
Press the ginger slices. Boil the red beans, semen coicis, ginger slices with water for one hour then drain well.
3. 把瀝乾的紅豆薏米及糯米飯放入鍋中,注入鮑魚汁煮至收汁。
Add the red beans, semen coicis and glutinous rice into a pot, pour in the abalone sauce, cook until the sauce is reduced.
4. 加雞蛋及芝士碎拌勻,慢火燜3分鐘。
Add egg and cheese shreds, simmer over low heat for 3 minutes.
5. 菠菜苗用鹽水灼熟上碟。
Cook the spinach with water and salt. Dish up.
6. 加紅豆薏米飯及鮑魚,即成。
Add the red beans, semen coicis and glutinous rice, then add abalone on top. Serve.
小貼士:可加芝士提升香氣。
Add cheese to enhance flavor.
