蒜香虾 Garlic Prawns
虾肉吸收了橄榄油和蒜片的香味,吃起来爽口弹牙又具层次感。
分量:2人份需时:45分钟
材料:
海中虾 10只
初榨橄榄油 半碗
红辣椒 2只
番荽
蒜头 5至6瓣
盐 少许
Ingredients:
Sea prawns 10 pieces
Virgin olive oil 1/2 bowl
Red chilli 2 pieces
Coriander
Garlic 5-6 cloves
Salt a little
做法:
1. 虾背𠝹一刀。
Slit the back of the prawns.
2. 加盐,放入雪柜腌30分钟。
Add salt to prawns and refrigerate them for 30 minutes.
3. 蒜头切厚片,番荽切碎。
Slice the garlic thickly. Chop the coriander.
4. 红辣椒去头尾及切丝。
Chop off the ends of chilli, shred.
5. 橄榄油以中火起镬,加蒜片慢火炸香。
Heat virgin olive oil over medium heat in a wok, turn to low heat, fry the garlic until aroma.
6. 加入辣椒丝及虾,炸至虾肉差不多熟,加番荽碎拌匀上碟。
Add chilli shreds and prawns, when the prawns are almost done, sprinkle with chopped coriander.
小贴士:番荽最后才下以保留香味。
Tips:Add the coriander at last to keep the aroma.
