喜氣洛神花糕(4人份)Hibiscus Pudding (4 Servings) 
賣相喜氣,甜蜜微酸,深受小朋友歡喜。





































材料Ingredients
杞子 20克Wolfberries 20g
乾洛神花 40克Dried hibiscus 40g
水 3杯Water 3 cups
魚膠片(浸軟)15克Glatine shee(t soaked)15g
大菜粉 5克Agar agar powder 5g
糖 100克Sugar 100g 
凍滾水 1杯Cold drinking water 1 cup

做法 Method
Step 1. 杞子浸熱水至軟,備用。 Soak the wolfberries until soft in hot water and set aside.


Step 2. 洛神花及水置鍋中。Add the hibiscus and water to a pot.


Step 3. 以慢火煮至洛神花出味。Cook the hibiscus over low heat until the flavor is developed.


Step 4. 隔出洛神花,茶湯倒回鍋中。Strain the hibiscus, then return the liquid to the pot.


Step 5. 加入魚膠片及大菜粉,煮至完全融化。 Add the gelatine and agar agar powder and cook until completely dissolved. 


Step 6. 加入糖及杞子,煮至糖融化,熄火。 Add the sugar and wolfberries and cook until the sugar is dissolved. Turn off the heat.


Step 7. 倒入凍滾水攪拌。Pour in the cold water and mix well.


Step 8. 倒入模中,置雪櫃冷藏至凝固,即成。 Pour into the mold and put it in the refrigerator to set. Serve.


小貼士 Tips
模具以凍滾水洗過,凝固的洛神花糕才容易脫模。 Rinse the mold with cold water, the puddings will be easier to release.
