识煮食谱|人气甜品师Bernice示范士多啤梨芝士酥皮挞

随《星岛日报》附送的食谱书《初夏滋味——手工甜品》,由人气厨师Bernice示范五款精致甜品,最适合「相机食先」。
士多啤梨芝士酥皮挞 Strawberry Cream Cheese Danish
现成的急冻酥皮,可制成各式各样香甜美点,例如加入忌廉芝士及士多啤梨,造型精致又可口。
分量:3人份 需时:30分钟
材料:
酥皮 1块
忌廉 25克
糖 10克
士多啤梨 9粒
糖霜 少许
芝士酱:
忌廉芝士 50克
糖 6克
牛奶 8克
柠檬汁 少许
Ingredients:
Pastry sheet 1 pc
Whipping cream 25g
Sugar 10g
Strawberries 9 pcs
Icing sugar a little
Cream cheese paste:
Cream cheese 50g
Sugar 6g
Milk 8g
Lemon juice a little
做法:
1. 将酥皮切成9块正方形,用圆形模裁走其中六块中间圆圈部分,把两块开洞的酥皮重叠在完整一块酥皮之上。
Cut the pastry into 9 even squares, crop a small circle in the middle on 6 of them, put 2 small hollow pastry overlap on 1 square pastry.
2. 用叉在圆圈中间刺出小孔,置200℃焗炉焗10分钟,放凉备用。
Prick inside of the tart with a fork, bake at 200℃ oven for 10 minutes. Let cool and set aside.
3. 把糖和柠檬汁加入已放软的忌廉芝士后打至顺滑。
Add the sugar and lemon juice in room temperature cream chesse and mix until smooth.
4. 逐少分三次加入牛奶,拌成芝士酱备用。
Pour the milk slowly in 3 times, combine well as cream cheese paste then set aside.
5. 将忌廉加糖打至稠身。
Mix the whipping cream and sugar and whisk until soft peak.
6. 加入芝士酱中拌匀。
Add into cream cheese paste and mix well.
7. 在酥皮上唧上芝士酱,放上士多啤梨。
Pipe the cream cheese paste on the pastries, add strawberries.
8. 饰上糖霜,即成。
Garnish with icing sugar. Serve.
小胋士:可依照个人喜好,以其他水果代替士多啤梨。
Tips:Replace the strawberry to any other fruit as you like.
